Holding the world record for serving the largest quantity of truffles (4000 kilos or 4 tons) to their 36,000 guests yearly, Michelin-starred truffle-specialist restaurant, Chez Bruno, is considered by many people as a “must-do” dining experience when visiting the South of France.
Located on a gorgeous Provençal property, just a couple of minutes from the quaint village of Lorgues, France, patrons can sometimes be seen arriving by helicopter.
The restaurant has a worldwide reputation, not only because the food is very special, but because many guests enjoy experiencing founder Chef Clément Bruno’s outgoing personality, charm and hospitality.
Chef Bruno expresses passionate opinions about food, family and, of course, preparing and serving his beloved truffle. As a child, Bruno, who sprouts from a poor Italian family, vividly remembers truffle hunting with his grandmother, just to put food on the table. This childhood experience was the motivating factor that inspired Chef Bruno to feature truffles in his restaurant.
Bruno’s passion for art and cooking is reflected in the dining rooms and the grounds, which are filled with unique artworks that tantalise the senses.
Restaurant Chez Bruno serves generous portions. Although the food and wine are somewhat pricy, you do get your money’s worth in quantity, quality and pure dining pleasure. Chez Bruno serves an impressive variety of local wines and religiously uses fresh, local produce in its cooking. The service is impeccable and guests have the choice of dining in various environments, both indoors and out. All dining areas have a distinctive, comfortable and welcoming feel.
Truffles from all over the world are combined with simple carriers such as potato or pasta. Bruno’s mantra is that you want to be able to really taste the truffle and not confuse your palate with a lot of unnecessary complex flavours, so lobster with truffles is not on the menu.
Diners are always welcome to visit the beautiful country kitchen, located on the lower level of the main building. Some lucky guests experience the amazing action of Chef Bruno’s son, Benjamin, and his small army of cooks, assistants and waiters from a small table for two located in the kitchen.
Benjamin the Chef and son Samuel, who serves as the restaurant manager, have returned to Chez Bruno to continue their father’s work after successful careers elsewhere. Chef Clément, who is always a significant presence in the restaurant is delighted:
“I have two sons: I explained to both of them (they have worked their way up) that this house where they were born, where they grew up and the grass where they used to play ball and where they rode their bicycles and motorcycles, is here.”
“I am 66 now and I am happy to see that Benjamin does fantastic work in the kitchen; that he has not forgotten the lessons I gave him, that he hasn't forgotten what he had learnt when he was an apprentice with other cooks: Alain Ducasse at the Plaza Athénée or with my former chef, who had been a cook at Ducasse’s or with Roger Jalou, who used to be Bocuse's chef and with me, with all modesty, who taught him and who still directs him today. I keep reminding him, ”be careful, stick to the line we've followed, keep its simplicity, we have something unique; here you can eat rabbit with gnocchi like the ones in Italy; here the cuisine is different and you can eat things that are so simple and so good that people travel from far to come and visit us.”
