Day 1: Enjoy a wonderful candlelit dinner and explore your host's (Rita Guastamacchia) massaria, once an old Olive Mill, which eventually became her family's summer residence, and hear stories of her family and Puglia's history.
Day 2: After breakfast you’ll walk along the narrow streets of Mola, knocking on the doors of the farmers, who display their daily products of vegetables and fruit on seggioline (little chairs) outdoors in this bustling little town. You will always receive a complimentary smile when you knock on their doors to ask for fresh produce and buy the products needed for the cooking lesson. Today you will learn to prepare fresh pasta and many recipes with pasta and vegetables. Enjoy what you have prepared for lunch and for dinner.

Day 3: Today you can choose what you want to cook! There are four options: cheese, meat, fish and cakes. 

Cheese option: mozzarella, ricotta and burrata. Learn how to prepare mozzarella in the morning and focaccia, panzzerotti, calzone, fried ricotta and mozzarella in carrozza and ricotta cheesecakes in the afternoon.
Fish option: Make fresh bread and taralli (savoury biscuits) and in the afernoon go back to Mola, just in time for the arrival of the fishing boats, to buy fresh fish for the cooking class.
Meat option: Prepare pasta with ragu, lamb and meat ragù with braciole.
Cake option: Learn a number of cake recipes and organise a cafe buffet.

For dinner you will enjoy the foods you have prepared and also get to enjoy a wine tasting of 2 white wines, 2 pink wines, 3 red wines and 2 dessert wines.

Cancellation Policy

Tuition is non-refundable anytime after one month before registered class begins. However, after this, a one-time change of dates is possible (when available), and free of charge.

There are no refunds if students miss classes or meals, either by electing to do so, or by late arrival or early departure.

If we must cancel a program for any reason, all fees and deposits will be refunded in full. Any related travel costs will not be reimbursed.

When I started with the cooking school their precious cooking notebooks inspired me and I would like to share with you the experiences that punctuated the life of those women. I consider myself the heiress of a family tradition and the guardian of a place where the frenetic rhythm of the metropolis are far away and unknown. My cooking school means enjoying the home-stay, the homemade cooking, endless conversation around the kitchen table, with a good glass of wine, by the fireplace in winter, and in the garden in summer. Here you arrive as guests and leave as friends.
