Day 1: Enjoy a wonderful candlelit dinner and explore your host's (Rita Guastamacchia) massaria, once an old Olive Mill, which eventually became her family's summer residence, and hear stories of her family and Puglia's history.
Day 2: After breakfast you’ll walk along the narrow streets of Mola, knocking on the doors of the farmers, who display their daily products of vegetables and fruit on seggioline (little chairs) outdoors in this bustling little town. Day 3: In the morning you will prepare fresh bread and taralli (savory bisquits) and other cakes that will be ready for dinner. Then you will prepare the "Marro", made with lamb, and the mixte meat ragù with braciole for dinner.  In the afternoon you will learn how to make other meat dishes, using the meat you prefer. 
Day 4: Today you will learn how to cook fish. Go to Mola to the fish market, just in time to get the fish directly from the fishermen arriving with their boats before sunset in the little harbour of Mola. Return to the masseria for the fish cooking class and enjoy a delicious dinner.
Day 5: Day trip to visit Valle d’Itria, the valley of the unique trulli buildings, Alberobello, an UNESCO Heritage, Locorotondo and Martina Franca. Enjoy lunch in Locorotondo and return to masseria at sunset.
After you relax for a bit, visit the town of Polignano a Mare for a wine tasting and dinner in a tradional osteria (Italian restaurant).
Day 6: Have you ever tried to prepare mozzarella? Today in the morning you will learn all the secrets and how it works: fresh milk and a bit of care.
The afternoon's cooking class is a full immersion in the paradise of fresh cheese. You will prepare focaccia, panzerotti, fried vegetables and fried ricotta, mozzarella in carrozza and ricotta cheese cakes.
For dinner you will enjoy the foods you have prepared and also get to enjoy the famous Granata of Vincenzo Corrado: Maccheroni alla Nobile.

Cancellation Policy

Tuition is non-refundable anytime after one month before registered class begins. However, after this, a one-time change of dates is possible (when available), and free of charge.

There are no refunds if students miss classes or meals, either by electing to do so, or by late arrival or early departure.

If we must cancel a program for any reason, all fees and deposits will be refunded in full. Any related travel costs will not be reimbursed.

During the first part of my life I worked as a journalist specialising in environment, agriculture and healthy food, but I always had a true passion for traditional Italian cooking, passed on by 4 wonderful women. When I started with the cooking school their precious cooking notebooks inspired me and I would like to share with you the experiences that punctuated the life of those women. I consider myself the heiress of a family tradition and the guardian of a place where the frenetic rhythm of the metropolis are far away and unknown. My cooking school means enjoying the home-stay, the homemade cooking, endless conversation around the kitchen table, with a good glass of wine, by the fireplace in winter, and in the garden in summer. Here you arrive as guests and leave as friends.
