Spend 7 days in an unexploited corner of Puglia rustica, discovering paths and legends in the blowing spring nature, the richness of art, history, architectural treasures, hidden villages, wonderful landscapes, superb dishes and wines.
Day 1: Enjoy a wonderful candlelit dinner and explore your host's (Rita Guastamacchia) massaria, once an old Olive Mill, which eventually became her family's summer residence, and hear stories of her family and Puglia's history.
You will be served calzone, pizza rustica, parmigiana, Riso patate e cozze paired with the famous “Granata” of Vincenzo Corrado: Maccheroni alla Nobile, a gorgeous surprise, followed by hum babà with Chantilly and home made liquors.
Day 2: After breakfast you’ll walk along the narrow streets of Mola, knocking on the doors of the farmers, who display their daily products of vegetables and fruit on seggioline (little chairs) outdoors in this bustling little town. Day 1: Enjoy a wonderful candlelit dinner and explore your host's (Rita Guastamacchia) massaria, once an old Olive Mill, which eventually became her family's summer residence, and hear stories of her family and Puglia's history.

In the afternoon you will go to Mola, at the fish market, just in time to get the fish directly from the fishermen arriving with their boats before sunset in the little harbour of Mola. Return to the masseria for the fish cooking class and enjoy a delicious dinner.
Day 3: After breakfast enjoy a tour in the fairytale countryside of Valle d’Itria, the valley of trulli, the dry-stone cone shaped old buildings.
Hidden in this gentle hills and valleys you will discover some the best and precious white wines of Puglia.
Visit the most famous caves of the area before unch in Locorotondo. For dinner you will have carne al fornello (grilled meat).
Day 4:  Spend a relaxing morning with a cookery demonstration in masseria. Have you ever tried to prepare mozzarella? Today in the morning you will learn all the secrets and how it works: fresh milk and a bit of care.
Enjoy a delicious lunch in masseria with focaccia, panzerotti, ricotta cheese cake, and some vegetables.
In the afternoon after you relax for a bit, visit the town of Polignano, where you will be free to discover old village, with the breathtaking terraces on the sea, and do some shopping.
Enjoy a wine tasting of the best Puglia wines, followed by dinner in a nice winery and osteria. 
Day 5: Visit Altamura, the medieval town with a wonderful Romanesque Cathedral and walk in the old centre to the oldest bakery.
Next, visit Gravina to buy everything for Pancotto. Visit the best cave of Gravina, famous for Verdeca wine. Enjoy lunch in a nice osteria in a grotto before returning to the Masseria to relax for the afternoon.
Day 6:  Today you will visit another masseria, next to Castel del Monte.
Visit to Trani, where you ‘ll walk along the harbour and look at the wonderful Romanesque Cathedral along the sea. Enjoy lunch in the historic town.
Visit the Castel del Monte, the Castle of the Emperor Fredric the 2nd and a cave famous for Castel del Monte wines and Moscato di Trani. 
Day 7: Departure.

Cancellation Policy

Tuition is non-refundable anytime after one month before registered class begins. However, after this, a one-time change of dates is possible (when available), and free of charge.

There are no refunds if students miss classes or meals, either by electing to do so, or by late arrival or early departure.

If we must cancel a program for any reason, all fees and deposits will be refunded in full. Any related travel costs will not be reimbursed.

When I started with the cooking school their precious cooking notebooks inspired me and I would like to share with you the experiences that punctuated the life of those women. I consider myself the heiress of a family tradition and the guardian of a place where the frenetic rhythm of the metropolis are far away and unknown. My cooking school means enjoying the home-stay, the homemade cooking, endless conversation around the kitchen table, with a good glass of wine, by the fireplace in winter, and in the garden in summer. Here you arrive as guests and leave as friends.
