The typical Salento cuisine is humble and poor, but very nutritious and rich in flavors, mirror of the many dominations that have alternated in these lands leaving marks in the culinary art and in the Salentine gastronomy.
 
The professionalism of the school is guaranteed and makes use of its chefs and twenty years of experience in traditional Salento restaurants.
 
Personalised menus and dishes of the day will be offered according to the different dietary requirements, favoring seasonal ingredients and especially those coming from the school's garden where, when the season permits, you could collect the fruits together.
 
A standard menu includes a main course of fresh pasta chosen from orecchiette, tria, minchiareddhi, sagne 'ncannulate, tortelli, ravioli, an appetizer or vegetable side dish (according to season) and a traditional Salento cake (choice between pasticciotto, pitteddhe, panzerotti, almond paste, jam tart).
