Tour Overview
Discover the secrets behind two of Emilia Romagna's famous products, Parmigiano Reggiano and Lambrusco wine, on this behind-the-scenes, small group tour from Parma.
After a short drive from Parma into the countryside, the first stop on your tour will be at a Parmigiano Reggiano factory. On arrival your expert guide will introduce you to the Parmigiano Reggiano historical context. The very first producers were monks! Then proceed to the “casello”, where the magic happens. This is where the raw milk is cooked inside huge “caldera” and the Parmigiano Reggiano is created.
You will have the chance to visit the brine room and the aging room where it will be possible to “beat” the cheese as a Parmigiano Reggiano Consortium expert does. At the end of the visit enjoy a tasting of three different aged Parmigiano Reggiano with local red wine and other Parmesan products.
Next stop is a winery that produces white and red wine including the most famous sparkling red wine, Lambrusco. While visiting the cellar the guide will explain the wine production process from the vineyard to the bottle. You will see the barrels used for aging and the specific bottles this sparkling red wine needs. The visit culminates with a tasting of the wines from the winery including the Lambrusco.
You will then be transported back to Parma.
Please note: During the afternoon tour (departure at 2.30pm) it will not be possible to attend the cheese making.
