The 23 hectares of vines of the Domaine Modat are situated within the commune of Cassagnes, in the Agly Valley, near Perpignan, on a plateau at 200-300 metres altitude.
The soil is mainly composed of white, grey and red gneiss (granitic sand) over a base of fractured granitic rock, an ideal terroir for making fine and elegant wines. It is well suited to the grape varieties used to make top quality dry white wines. The well-drained soil gives the red wines fine, silky tannins, a light structure and great freshness for wines of the south of France.
The domaine is officially converted to organic agriculture since March 2011. Herbicides are therefore not used. Instead, they plough and work the soil to encourage natural ground. Their healthy respect for the environment which is mirrored in the “minima interference” farming method.
Each parcel of vines is hand-picked at optimum maturity after daily tasting of the grapes and analysis of the phenolic ripeness of the fruit. The grapes are sorted on the vine and on a sorting table at the cellar.
