Winery Overview
Polvanera was born from a long family tradition that has always had roots in wine making. Filippo Cassano, owner and oenologist, has always recognised the potential of the native grape varieties in his land. Filippo learnt his style of wine making both from his father, Vincenzo, and from the school of agriculture ‘Basile Caramia’ in Locorotondo. Based on his experience, he decided to focus his winery on a pure style of winemaking, working with the indigenous grape varieties that make the land, and it’s wine, unique.
Polvanera has vineyards spanning over 120 hectares, among which there are the red grapes Primitivo, Aglianico and Aleatico and the white Minutolo, Moscato, Falanghina, Bianco D’Alessano, Marchione and Maresco. Producing several different kinds of Primitivo, the difference between the wines comes from the age of the vines, the territory on which they are grown, and the altitude - which varies from 300 to 450 metres.
Each of the wines is designed to enhance the characteristics of the terroir. They are aged first in stainless steel and then in the bottle, Primitivo and other native grapes can develop fully without being masked by the flavours of wood. Each one is made organically, with the help of modern machinery and technology in the wine making process.
Situated between Acquaviva delle Fonti and Gioia del Colle, Polvanera is immersed in a unique kind of landscape full of vines, typical stone walls of the area, and sprouting downy oak trees. At the centre of the winery there is a typical apulian stone house (masseria) dating back to the 1820’s where the name of the company – translating to ‘black dust’ - originates. The wines are all made there, and stored in the cave-like cellar, dug 7 metres deep into the characteristic limestone rock.
